To celebrate a particularly successful porcini forage, my mom would always cook up a big pot of polenta and serve it topped with the just-harvested mushrooms, sauteed in buttery olive oil and embellished with a flurry of Parmigiano-Reggiano. There's no better comfort food. The latest addition to our heirloom copper cookware collection, this hand-hammered, unlined pot is made in the classic shape that has been used for polenta in Italy for centuries. High sides and a long handle of cast brass ensure molten polenta won't splatter the cook. Curved edges make for neat, no drip pouring. Use a wooden spoon to avoid scratching the pot.
