Ingredients
Serves: Serves 6-8
8 ripe avocados, peeled, pitted, and halved
1 red onion, thinly sliced
1/2 cup extra-virgin olive oil, plus more for grilling
3 lemons, juiced
Gray salt
Freshly ground black pepper
1 tablespoon finely minced garlic
1/4 cup minced Italian parsley
Directions
Slice the red onion and place in a bowl with lemon juice. Dice the avocado and place in bowl with the onions. Toss well to coat. Add olive oil, garlic and season with salt and pepper. Just before serving stir in the parsley.
