Ingredients
Serves: Serves 6-8
4 Ripe mangos- Peeled and diced in large pieces to yield 3cups diced fruit
1/2 cup Coco Lopez
1/2 cup coconut milk
2 tablespoons fresh lime juice
2 teaspoons minced ginger
1/2 tablespoon butter
1 box Chocolate Biscotti
1 box Lady Fingers
Directions
In a small saucepot combine the diced mango, Coco Lopez,coconut milk, and ginger. Bring to a simmer over medium heat and continue tosimmer, stirring occasionally so that it does not scorch on the bottom. Simmerfor about 15 minutes, remove from the heat and stir in the butter. Emptycontents of pot into a blender or food processor and puree until smooth. Addthe lime juice and blend just to combine. Pour the mixture into a servingbowl. Serve with chocolate biscotti andlady fingers.
